Have a PC which connects remotely to the network using VPN. I want to be able
to print from any network client to the printer connected to the remote PC
via the VPN.

If I can get DHCP to assign a specify IP address to the VPN/RAS connection
each time the user (/PC) connects to the network via the VPN link, then I
should be able to list that remote printer in my server printer list, or any
Client printer list (Given that driver's exist, etc).

But how can I make DHCP assign a specific local (192.168.xx.xxx) IP address
when the VPN link is established. Can DHCP recognise either the user, PC, or
something? (The remote PC's name doesn't appear to be recogniseable or
findable in explorer.)

Does the server run Windows 2003? I think the best way is assign static to the VPN client. This search result may help,

To give a particular ip to a user when he VPN's into the RAS server is by setting the property in the user properties.

Go to user properties page on RAS server (Run -> lusrmgr.msc)
Click on user properties -> dian-in Tab -> Assign static ip address (here u can mention a address from your DHCP scope and this address u can reserve in the DHCP scope)
