If I want to replace a windows 2000 DC with a new 2003R2 DC is there an easy
way to move the printer shares from the old to the new and have the clients
automatically use the new?

I have only found one way, by hand. As a matter of fact all your client
machines use the computer name share name to map the printer. So you will
need to alias the print server so that all the clients won;t have to be
remapped. Of course the mapping names will have to be kept exactly the
same.
