Does anyone know of a method (registry hack) to set the
default share permission for all NEW shares
from "everyone": full control to say "authenticated
users": full control

This will prevent people from forgetting to change it each
time a new share is created.

There is no such registry hack that I am aware of. You can configure the
user right for access this computer from the network on any computer or at
domain/OU level so that everyone is removed and replace it with
authenticated users. That way no one will get guest access to the computer
via a share in case the guest account is enabled. The link below explains
